Easy oven-baked broccoli, lentil and spinach bites

Easy oven-baked broccoli, lentil and spinach bites with courgetti noodles and a red pepper hidden veg tomato sauce! 🌱

Ingredients: (makes 12 “bites/balls”)
1 cup spinach, chopped finely
½ yellow onion, chopped finely
150g cooked puy lentils (½ bag of @merchantgourmet are what I used)
½ head broccoli, florettes chopped finely
1 tsp garlic powder
1 tsp Italian seasoning
2 medium eggs
Dash of salt

Preheat oven to 180c fan. Mix all ingredients together in a bowl and shape into ball shapes, they may seem loose but will form shape and hold after baked. Place baking paper onto a baking tray. Place balls onto tray (should make 12) and place into the oven for 20-22 minutes until starting to brown and feeling sponges but holding form. Serve on top of your courgetti (made using my @oxouk spiraliser) boiled in water for under a minute for al dente or until desired softness) and with a heated tomato sauce of your choice! I usually use one with “secret veg” so there is a little more health, and Sainsbury’s do a great one that’s low salt/sugar, too. This is the perfect meatless monday meal and you can eat the bites on their own with some garlic mayo (like Josh did about half of them) or like this as a meatball replacement!
